I love this tortellini soup recipe. The original recipe came from one of my sisters and I adjusted it a bit to work with my home canned goods. When my kids see that we are having this for dinner they are always excited for the meal. We never have to worry about having leftovers with this one. It is the perfect meal to curl up with on a cool fall/winter day but is so easy to make that it is worth making in the summer to reduce your time in front of the stove.
Ingredients:
2 pounds sausage
1 quart tomato juice
1 quart broth (chicken or turkey)
1 quart canned tomatoes with liquid
2 cubes chicken bouillon
1/4 cup dry kale or spinach
1 teaspoon garlic
1 teaspoon Italian seasoning
1 teaspoon basil
1 teaspoon ground thyme
1.5 pounds three cheese tortellini
1 cup of cream (or whole milk)

After the sausage is all brown and crispy add 1 quart of tomato juice. (To learn how to can tomato juice just click here: https://www.wisdompreserved.life/canning-tomato-juice
Then add 1 quart of broth. I used turkey for the video but I actually prefer chicken a little bit more. Next, I use kitchen shears to cut up my canned tomatoes and add them to the pot. https://www.wisdompreserved.life/canning-whole-tomatoes-in-water
Then, I add 2 chicken bouillion cubes and 1/4 cup dehydrated kale. (https://www.wisdompreserved.life/how-to-dehydrate-kale)
Finally, I put in 1 teaspoon of garlic, 1 teaspoon of Italian seasoning, 1 teaspoon of basil, and 1 teaspoon of ground thyme, and simmer it for 15 minutes.
After the spices have dispersed well in the broth, I add 1.5 pounds of three cheese tortellini and simmer for 2-5 minutes until the tortellini is soft.
The finishing touch is to pour in 1 cup of cream before serving.
I love eating this with homemade rolls, at lunch, dinner, anytime really. It also has the added benefit of using so many of my home-preserved items.
