How to make tomato tortellini soup

I love our home-canned gourmet tomato soup. I enjoy it with grilled cheese sandwiches but I also really like to use it to make this quick and easy Tomato Tortellini Soup.

This really is so easy to make. I start by emptying 2 pint jars of gourmet tomato soup into a medium soup pot.

I then add 2 cups of dry three-cheese tortellini. I get mine from the bulk foods area of my local supermarket.

I then bring it to a boil over medium-high heat and cook the noodles until they are tender. This usually takes 15-20 minutes. If you are unsure, just try a noodle to see if it is the right softness for you. These dry noodles can take a long time to soften up. That being said, you don't want them overcooked and mushy either.

The final step is optional. Sometimes I add cream and sometimes I don't but you can add up to 1/4 cup of cream to the soup to give it a more creamy taste.

And that is all there is to it. Super easy, super fast, and super good.

Enjoy!!
