How to Make Your Own Sausage

This homemade sausage is one of my favorite recipes. It can be used with any ground meat but my favorite is pork. The first time we tried this recipe, we froze up all the sausage and didn’t use it until a few weeks later. After we tried it, my husband was so worried that we hadn’t written down what we did. (Which is often the case.) Thankfully, this was one I had jotted down the notes of and we were able to put it in our permanent recipes. We make it frequently and love to fry it up with our farm fresh eggs.


INGREDIENTS

  • 2 pounds of Ground Meat

  • 2 tsp salt

  • 1 tsp parsley

  • 1/2 tsp ground pepper

  • 1/2 tsp thyme

  • 1/2 tsp ground sage

  • 1/2 tsp coriander

  • 1/2 tsp chipotle pepper powder


It is a fabulous blend of savory spices. The first step is to mix 2 pounds of ground meat with 2 teaspoons of salt, 1 teaspoon of parsley, and 1/2 a teaspoon each of pepper, thyme, sage, coriander and chipotle pepper powder. The thyme and coriander could be either whole or ground.

We have a video on how to make hot pepper powder if you need instructions on that. Other hot peppers could be substituted for the chipotle pepper but I really like the smoky flavor it brings.

You have a few different options for mixing the meat. You can mix it by hand, in a KitchenAid or the ideal is to put it through the meat grinder one more time with the spices in it.

Store in the refrigerator and use within 4 days or for longer storage place it in the freezer. Allow it to sit with the spices in it at least overnight for the best flavor.
