Peeling beets doesn't have to be difficult. When done properly it is quite easy and strangely satisfying. Most beet recipes call for this step as a starting point so I decided to share how it is done.

How to Perfectly peel beets

Prepare Blanching Supplies

  1. The first step is to cut the leaves to 1-2 inches from the beet. This is important so the juice remains in the beet and doesn't bleed out.

  2. Then I wash my beets in warm water with a vegetable brush to remove all the dirt from the garden.

  3. I also prepare a large pot for the beets with enough water to cover them all by 4 inches. I use my stockpot with a basket so I can easily remove them but I have just used a wire skimmer to remove them in the past.

  4. It is best to blanch beets of the same size together as the big ones will take longer to cook.

Peeling beets

  1. Place the beets in the pot and bring the water to a boil.

  2. Continue to simmer the beets until they are soft enough for a fork to puncture through to the center. Remove them from the boiling water. Allow them to cool for 5 minutes.

  3. Put on gloves if you do not want your hands stained with beet juice.

  4. Then, use the tips of your fingers to gently remove the skin. It should slide right off. After the skin has been removed, place it in the bowl and continue this process until you have done all of your beets.

  5. You now have perfectly peeled beets ready for your recipes.
