Strawberry Cream Muffins using Homemade Bisquick Mix

Muffins particularly strawberry cream muffins are a fabulous addition to any morning meal. My homemade bisquick mix makes it so much easier to make.

If you are using fresh strawberries, first wash them and remove their stems with a strawberry huller or a paring knife. I like to use strawberry preserves and save the syrup for on top of waffles later.

Combine:

3 cups of the bisquick mix

1 1/2 cups cream

3 tablespoons sugar

1 teaspoon vanilla

1/2 cup mashed strawberries

1 egg

This is a somewhat thick batter. If you wanted a thinner batter you could add more cream.

Grease the muffin tins with coconut oil or shortening and fill 3/4 of the way full with batter. Bake at 350 degrees for 15-20 minutes. Remove from oven when the top is golden brown. Makes 18 muffins.

Serve warm or cold, with or without butter.
