Strawberry Cream Muffins using Homemade Bisquick Mix

Muffins particularly strawberry cream muffins are a fabulous addition to any morning meal. Our homemade bisquick mix makes it so much easier to make.

If you are using fresh strawberries, first wash them and remove their stems with a strawberry huller or a paring knife. Combine 3 cups of the bisquick mix, 1 1/2 cups of cream, 3 tablespoons of sugar, 1 teaspoon of vanilla, 1/2 cup mashed strawberries, and 1 egg. This is a somewhat thick batter. If you wanted a thinner batter you could add more cream.

Grease muffin tins, sprinkle the bottom with sugar, and fill 3/4 of the way full with batter. Bake on medium heat. Remove from waffle maker when both sides are golden brown. Makes 24 muffins.

Serve warm or cold, with or without butter.
